Tradition and contemporaneity are the pillars of Hatch, the new venture by Marcel Nagayama, from the Nagayama clan, awarded on the Rio – São Paulo axis with Naga. Therefore, the Japanese restaurant in Botafogo brings the family's ancestry into a haute cuisine menu, with quality dishes well executed by experienced chefs. In fact, the highlight of this time is the executive menu, offered during the week, which offers a salad, main dish and dessert.

Just as there is the sushibar option (R$85), with salad, salmon tataki and a 10-piece combo, customers can also opt for hot cuisine. Thus, on the executive menu, Chicken Teriyaki (R$57), Shogoyaki (R$68), Filet Katsu (R$68) and Salmon Teriyaki (R$79) are successful. However, it is still possible to add glasses of red wine (R$25), white wine (R$25) or House Sake (R$28).

With a 300 m2 hall, the project has elegance and sophistication, where 80 people can sit to enjoy Japanese haute cuisine, in Botafogo. Based on neutral tones, the decor has wooden details and long black sofas that share the tables. The drinks menu is designed by an award-winning mixologist

Right at the entrance, a sophisticated bar with a drinks menu designed by award-winning mixologist Alex Mesquita. There are three signature recipes on the menu: Hatch Fizz (R$38), with gin, Liquor 43, pineapple and sparkling water; the Velha Cuba (R$38), with rum, Malibu, strawberry, lemon and honey syrup, and the Sweet Citrus (R$38) with citron vodka, ginger syrup, pineapple juice and bitters.
